Pumpkin and Grana Padano soup

After Halloween is over, you are left with… a pumpkin. Don’t throw it away, it’s edible! ⠀
Here's an Umami pumpkin recipe.
Ingredients:⠀
Serves 4⠀
⠀
500g pumpkin, peeled, seeds removed and cut into chunks⠀
1/2 white onion⠀
1 tbsp butter⠀
100ml chicken or vegetable stock⠀
1tsp smoked paprika powder⠀
400ml full fat milk⠀
60g Grana Padano cheese, grated ⠀
Parmesan, Pecorino or any Italian style hard cheese can be used instead.⠀
Salt and pepper⠀
Method:⠀
Thinly slice the onion along the fibre. ⠀
Melt the butter in a pan and saut the onion until translucent.⠀
Add pumpkin, stock, smoked paprika powder and cook for 20 minutes until the pumpkin is soft.⠀
Liquidise into smooth paste using a food processor. ⠀
Pour the paste back into the pan. Add milk and cheese. ⠀
Heat gently until cheese is dissolved into the soup.⠀
Season with salt and pepper.⠀
Sprinkle with your favourite toppings e.g. roasted pumpkin seeds, dry-fried bacon bits, parsley, or croutons.⠀
